After a day of running from a possible tornado to being locked out of the “safe house” we ran to, and getting drenched in the process, we wound up back at home and starving! Sunni and myself are on the low carb lifestyle so we wanted something that we could fix quick. It needed to be something that fit our diet and Great Day and the twins would eat.
We all love Mexican food so chicken fajitas it is. Let me tell you how we made low carb fajitas that were delicioso.

We love chicken fajitas (not to mention we had some fresh, not frozen, breasts on hand) so we got out the chicken and took the skin off and cut the meat off the bone. We took the meat off in solid pieces as much as possible. I then cut the chicken length wise to make 2 thinner breasts (see photo below).

Lay your hand flat on the top of the breast meat and use a sharp knife to splice it into 2 pieces. (Be careful not to cut yourself)
After preparing the chicken, then take a minute to slice up some onions to be sauteed for the fajitas.

Use the following spices to sprinkle on each side of the breast meat: cumin, paprika, chili powder, garlic power and onion powder along with some salt.

Sprinkle the salt and the cumin a little heavier than the other spices, but of course that is a matter of preference. (Make sure to sprinkle the spices before you put the meat into the frying pan. If you sprinkle them over the meat in the pan they will burn and that would not be good)

Prepare your frying pan (I used cast iron) with butter and olive oil. Make sure the pan is hot, but not scorching. Then lay the breast in the pan.

After the breast are done take them up on a cutting board. Let them rest for about 4 to 5 minutes. You do this so the juices will stay in the meat. After the meat has rested then slice it up for the fajitas in strips.

While the chicken is cooking slice up the lettuce for the fajitas. While you meat is cooking you can saute your onions in a separate pan or saute them in the pan you cooked the chicken in.


What makes this low carb you say…well let me just share this with you. The best thing we have found in a long time. Low carb tortillas!!! That’s right…

And they are really good! We found these at Winn Dixie. They are thinner than regular tortillas, but to us they tasted just the same. We love them. You can heat them in the microwave rolled in a damp paper towel.

This is the prepared meal and we were eating within 30 minutes of getting home (even with all the prep work for the chicken).
